Gluten Free Ham and Spring Onion Fritters

Ingredients

  • 250 gram red grape tomatoes
  • 1 teaspoon balsamic vinegar
  • 1 1/2 tablespoon olive oil
  • 1 cup gluten-free self-raising flour
  • 3/4 cup soy milk
  • 250 gram gluten-free shaved ham, finely chopped
  • 4 spring onions, thinly sliced
  • 1 large avocado, coarsely chopped, to serve

Directions

  1. Preheat oven to 200°C.
  2. Place tomatoes on an oven tray. Drizzle with vinegar and 1 teaspoon of the oil. Season. Roast for 15 minutes or until tomatoes just soften.
  3. Sift flour into a large bowl. Gradually add milk in batches, stirring after each addition. Add ham and spring onion, stirring to combine. Season.
  4. Heat remaining oil in a large, nonstick frypan over medium heat. Spoon ¼-cups of batter into pan. Cook for 2½ minutes each side or until golden-brown and cooked through. Repeat with remaining batter to make a total of 8 fritters. Serve with tomatoes and avocado.
