Salted Caramel Bliss Balls

I love anything salted caramel and peanut butter so when I discovered salted caramel peanut butter, I was in heaven! These salted caramel bliss balls are the perfect combination of sweet with a touch of salty and are the perfect pick-me-up snack. The sweetness comes from the dates which add to the caramel flavour and make these little protein energy balls also high in fibre and potassium. Keep them in the fridge to have with your morning coffee, pop them into the kids lunchbox or hide them in your desk at work for a quick mid-afternoon energy boost!

Ingredients

  • 12 fresh medjool dates (pitted) or 1 cup dried dates soaked in boiling water for 15 minutes and drained well
  • 1 tablespoon pure maple syrup
  • 1/2 teaspoon natural vanilla essence
  • 1/2 cup salted caramel peanut butter or sub salted crunchy peanut butter
  • 3/4 cup almond meal
  • 1/2 tablespoon chia seeds or whole linseed
  • 1/4 cup raisins
  • 1/2 cup organic dessicated coconut or finely chopped nuts to roll (I used chopped cashews)
  • 1/4 teaspoon salt (optional)

Directions

  1. Add all ingredients (except the dessicated coconut / chopped nuts) to a food processor and pulse until mixture is well blended and sticks together.
  2. Shape into balls and roll in the chopped nuts or organic dessicated coconut.
  3. Refrigerate . . . enjoy!
